Tasting Notes

Aromas of white chocolate peppermint bark, Meyer lemon and sweet creamed corn. On the palate, caramel, amaretto and cinnamon with fruity notes of baked pineapple upside-down cake, red apple, fresh cut lemon and thyme, with a medium length and soft finish.

Winemaking

Fermentation and aging in 24% new, 21% 1-year old and neutral French oak barrels. 100% indigenous yeast and spontaneous partial malolactic fermentation. Aged 11 months in the caves at an average temp of 10-12 °C.

Chardonnay

Tasting Notes

Aromas of dried apricot, guava, and papaya, honeysuckle, quince, hazelnut paste. On the palate, tropical fruit salad, honeycomb, brown butter and sage, apple sauce infused with ginger, almond, with a medium-long finish.

 

Winemaking

Crafted from a single clone in Block 3, this wine expresses its individuality. Fermented and aged for 11 months in 25% new, 25% 1-year old and neutral French oak barrels, and spontaneous malolactic fermentation. Clone 548 presents excellent structure and strong exotic fruit expression.

Aromas of sweet creamed corn, white peach, early spring flowers and freshly grated nutmeg. On the palate, citrus peel, clementine and baking spices.

Winemaking

A single block selection from our oldest plantings in Block 4. 18% new, 24% one year old and neutral French oak barrel fermentation and aging. 100% indigenous yeast ferment followed by 11 months aging in our wine caves.

Aromas of stewed orange and red fruit, violet, saddle leather, black licorice coils, dried oregano and tomato leaf. On the palate, ripe cherry compote, cranberry, green strawberry, savory, earthy, cinnamon stick, bergamot tea, rosehip, anise and ginger.

Winemaking

The flagship Pinot Noir was picked mid-to-late Sept and fermented in 2-ton open fermenters and 3-5 ton gravity-fed tanks. A blend of all clones planted on the property. 100% indigenous yeast and spontaneous malolactic fermentation. Aged in 12% new, 16% 1-year old and neutral French oak barrels for 11 months in our caves.

Tasting Notes

Aromas of strawberries with mint, bing cherry, toasted oak, marmalade, orange peel, prune jam and dried tarragon. On the palate, stewed ripe cherries and currant, lavender, rosemary hedge, dark chocolate and roasted coffee bean.

Winemaking

An extended pre-fermentation cold soak trial of maintaining 4°C for 10 days. A blend of Blocks 3 and 4, 2 of our higher elevation blocks. 100% indigenous yeast and spontaneous malolactic fermentation. Aged in 17% new, 50% 1-year old and neutral French oak barrels for 11 months in our wine caves.

Tasting Notes

Inviting nose of clove, vanilla, dark cherry, and orange essence. The palate is earthy with spice notes. Tertiary flavours of forest floor linger and pair well with food.

A single block selection from Block 9. 50% new, remainder is mix of 1-year and neutral French oak barrel aging. 100% indigenous yeast ferment followed by 10 months aging in our wine caves.

Aromas of grilled pineapple, lemon tart, dried mango. On the palate, brioche, essence of mandarin & orange blossom, crisp and elegant, long lasting refined bubbles and delicate mousse.

Winemaking

In the style of Methode Traditionelle, cave aged on lees for 24 months prior to disgorgement. Composed of 53% Chardonnay, 47% Pinot Noir.
