2021 Pinot Noir Rosé

With shades of salmon and Pink Lady apple, this wine has a lot going on! It boasts sweeter aromas of wild strawberry, candied apple, cotton candy and orchard blossoms, delicately perfumed with slightly more savoury notes of blood orange and tangelo. Like biting into a juicy watermelon near the rind, the palate is playful and fresh with flavours of grapefruit, young strawberries and tart apple, with a delicate herbal note and a hint of freshly ground black pepper on the finish.Grapes were harvested from blocks 23 and 25 (the Orchard Blocks). The Orchard Blocks have a lot of clay in the soils and tend to remain cooler, which helps preserve the light berry and fruit characters, but also imparts a smoothness to wine. The grapes were whole bunch pressed after about 16 hours of skin contact, using a sparkling wine press program, to minimize the crumbling inside the press and extract only delicate colour. The juice was cold settled, then racked and fermented like a white wine, preserving the natural Pinot Noir flavours. Drink up while it’s super fresh and juicy… it need only last until the next vintage is released!

2020 Sparkling Riesling

Our second Sparkling Riesling release is even livelier and more delicious than the first! Aromas of key lime and green apple awaken your senses, which are then dazzled with nuances of apple danish, a subtle hint of toast and an invigorating spritz. The delicate, fine mousse and vibrant, fresh palate showcases all of the classic dry Riesling characteristics and the racy acidity is balanced with a low dosage of our sugar liqueur.Who needs food pairings with bubbles? If we must, oysters are a very obvious choice… but so is life! There is no need to wait for a special occasion, when every day should be a celebration. Go on, just pop a bottle (saber it if you dare) and raise a glass to LIFE!

2020 Glacial Till Pinot Gris

This inaugural release of the Glacial Till Pinot Gris offers a very unique and intriguing initial sensation, opening with savoury, stony and herbaceous aromas with a spring-like freshness. As the wine opens up and warms in your glass, layers of golden apple, white peach and nectarine start to dance, delicately perfumed with floral nuances and hints of orange marmalade. The palate has depth, layers and texture; the rich oily mouthfeel coats the palate and offers flavours of juicy peach and apricot, while delivering a long-lasting smooth finish with a pervading green apple freshness. This is most definitely a cooler season comfort wine. The depth and structure allow this to be paired with bigger protein-rich dishes, that you might often pair a red wine with, like a juicy steak! A nice pork tenderloin or cutlet with a rosemary apple sauce or stone fruit compote also comes to mind, accompanied with a caramelized onion tart. For more of a casual grazing meal, try it with meat or cheese fondue, raclette or just a delicious cheese platter with manchego, pecorino, or strong aged cheddars.

2021 Goldie Red

This year’s release radiates a beautiful garnet colour lifted with light purple hues. The aromas continuously unravel, revealing delicate perfumes of violet, lavender and sweet hay, enriched with dark cherry and brambly fruits wrapped up in a beautiful gamey mix of dried herbs, star anise, clove and allspice. Like a berry explosion in your mouth, flavours of red plum, dark cherry and strawberry jam are rounded out with savoury indulgences of smoked and cured meats. If you love European delicatessens or Jägermeister, this is definitely the wine for you! A blend of Pinot Noir (68%) and Gamay Noir (32%), fermented in small 2-tonne open stainless fermenters with 25% whole clusters, the skins were gently plunged once to twice daily. After fermentation, we left the wine on skins for extra maceration, to develop elegant smooth texture before pressing. After gently pressing, the individual components were blended and sent to an oak tank and barrels for secondary (malolactic) fermentation (100% French oak, 0% new). The wines rested in French oak for about 5 months. Chill it a little before serving – it brings out the juiciness!

2020 Late Harvest Chardonnay

Exotic tropical notes of candied guava and starfruit entice your sniffer to inhale deeply, to enjoy the aromas of Bartlett pear, crunchy unsalted almonds and freshly opened white blossoms that await. After a subtle initial attack, the palate is lively and fresh, swirling with candied pineapple and peaches & cream dusted with icing sugar, evolving into slightly more decadent flavours of cashews and Grandma’s apple pie. The subtle lingering sweetness is well balanced with lively acidity.Paired with sweet, savoury or a particular lifestyle (called relaxation!), this wine can be enjoyed in many ways! Some more obvious pairings are with apple pie, crème brûlée and Mexican flan, but we wouldn’t judge if you opted for the 8 am cinnamon roll. If you prefer something more savoury, then perhaps some hard cheeses or Chicago mix popcorn. But the best pairing might be in front of a fireplace with your fuzzy socks on!

2017 Blanc de Blanc Sparkling Chardonnay

The 2017 Blanc de Blanc boasts fresh light aromas of tart green apple, young pear and key lime, followed by toasty buttery notes reminiscent of fresh baked croissants and brioche, with a faint underlying hint of winter forest. The rising streams of tiny bubbles are a telltale sign of a delicate palate and soft fine mousse. The finish is quite dry with a refreshing bright acidity.Pair this with anything you want… but our top recommendation is with loved ones and friends. Life is too short, just enjoy it!
